Twice baked potatoes are a beautiful mashup of a baked potato and mashed potatoes. With a twice baked potato, you get the delish salty skin of a baked potato as well as the smooth, creamy lusciousness of mashed potatoes. A twice baked potato is truly the best of both worlds.

This version of a twice baked potato isn't actually baked, it's air fried! I love making baked potatoes in my air fryer, so a twice baked version was a no-brainer for me.

Ingredient Notes


  • Potatoes: Small or medium-sized russet potatoes work well here. Yukon gold potatoes will also work in a pinch. Choose potatoes that are similar in size so they cook evenly.
  • Olive oil: Use enough to lightly coat the skins so the salt sticks. Another neutral cooking oil works the same way.
  • Kosher salt: I suggest using kosher salt on the potato skins.
  • Sharp cheddar cheese: Use a sharp variety for a stronger cheddar flavor.
  • Milk: Any milk works; start with 1/4 cup and add up to 1/2 cup to reach the texture that is preferred.
  • Butter: Use regular salted or unsalted butter, then adjust seasoning to taste.
  • Sour cream: Full-fat sour cream and light sour cream will works if that is what you prefer.
  • Black pepper: I always use fresh ground black pepper.
  • Green onion: This is optional, but highly recommended! You can also use chives.

INGREDIENTS

4 small or medium-sized potatoes
Olive oil, for coating potatoes
Kosher salt, for coating potatoes
3/4 cup sharp cheddar cheese, shredded
1/4 to 1/2 cup milk
1/4 cup butter
1/4 cup sour cream
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons chopped green onion (optional)



INSTRUCTIONS

  1. Wash the potatoes and then dry them with a paper towel. Using a sharp knife, carefully prick each potato 3 times on one side, flip, and then prick 3 more times on the other side.
  2. Drizzle the potatoes with a little bit of olive oil and use your hand to completely coat the potatoes with the oil. Generously sprinkle kosher salt on all sides of the potatoes.
  3. Place the potatoes in the air fryer in a single layer. Air fry at 400 degrees F for 40 minutes, flipping halfway through the cooking time.
  4. Remove the potatoes from the air fryer and cool for 5 minutes. Cut each potato in half lengthwise. With a spoon, scoop out most of the insides of the potato into a large bowl, being careful not to tear the skin.
  5. Mash the potatoes with the shredded cheddar cheese, milk (start with 1/4 cup and add up to 1/2 cup until the desired consistency is reached), butter, sour cream, salt, and pepper using a potato masher or electric beater (hand mixer). Stuff the potato skins with the filling.
  6. Return the filled potato skins to the air fryer and air fry at 400 degrees F for 3 minutes or until browned on top.

Cooking time will vary between different models of air fryer. I use the Ninja 4-Quart Air Fryer.
