Twice baked potatoes are a beautiful mashup of a baked potato and mashed potatoes. With a twice baked potato, you get the delish salty skin of a baked potato as well as the smooth, creamy lusciousness of mashed potatoes. A twice baked potato is truly the best of both worlds.

This version of a twice baked potato isn't actually baked, it's air fried! I love making baked potatoes in my air fryer, so a twice baked version was a no-brainer for me.

They came out so good! I think you're going to love this air fryer version as much as I do!

HOW TO MAKE AIR FRYER TWICE BAKED POTATOES

Making twice baked potatoes in your air fryer is super simple. First, you prick your potatoes, then coat the skins with olive oil and salt. Next, you air fry the potatoes at 400 degrees F for 40 minutes. The cooked potatoes are then cut in half and the flesh of the potato is scooped out of the skin, leaving the skin intact. The potato is combined with milk, cheese, butter, sour cream, salt, and pepper. Optionally, you can add other mix-ins of your choice. The potato mixture is spooned back into the skins and air fried again for 3 minutes. See below for a detailed ingredients list and instructions.

WHAT'S IN TWICE BAKED POTATOES?

You can make twice baked potatoes in your air fryer with just a few simple ingredients:
  • small or medium-sized russet potatoes
  • olive oil
  • cheddar cheese
  • sour cream
  • butter
  • kosher salt
  • black pepper
  • optional mix-ins such as green onions, bacon, broccoli, etc.

CAN YOU MAKE TWICE BAKED POTATOES IN ADVANCE?

Yes, you can make twice baked potatoes in advance. Prepare the potatoes in your air fryer, fill with the filling, then refrigerate before the last air fryer step. Store in the refrigerator for up to three days. When ready to serve, complete the last air frying step, adding a few additional minutes to allow the potato to heat through.

Air Fryer Twice Baked Potatoes


Air Fryer Twice Baked Potatoes have a crispy salty skin filled with a cheesy potato filling. They are so easy to prepare in your air fryer and so good!

INGREDIENTS


4 small or medium-sized potatoes
olive oil
kosher salt
3/4 cup sharp cheddar, shredded
1/4-1/2 cup milk
1/4 cup butter
1/4 cup sour cream
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons chopped green onion (optional)


INSTRUCTIONS


1. Wash your potatoes and then dry them with a paper towel. Using a sharp knife, carefully prick the potato three times on one side, flip, and then prick three more times on the other side.

2. Drizzle the potatoes with a little bit of olive oil and use your hand to completely coat the potato with the oil. Generously sprinkle kosher salt on all sides of the potato.

3. Place the potatoes in your air fryer. Air fry at 400 degrees F for 40 minutes, flipping halfway through the cooking time.

4. Remove the potatoes from the air fryer and cool for 5 minutes. Cut each potato in half lengthwise. With a spoon, scoop out most of the insides of the potato into a large bowl, being careful not to tear the skin.

5. Mash the potatoes with the shredded cheddar cheese, milk (start with 1/4 cup and add up to 1/2 cup until you reach your desired consistency), butter, sour cream, salt, and pepper with a potato masher or electric beater. Stuff the potato skins with the filling.

6. Return the filled potato skins to your air fryer and air fry at 400 degrees F for 3 minutes or until browned on top.


NOTES


Cooking time will vary between different models of air fryer. I use the Ninja 4-Quart Air Fryer.
