Stuffed mushrooms are like the perfect appetizer.  Are you a fan of stuffed mushrooms?  If you are, then you know what I'm talking about.  There is no occasion that a little stuffed mushroom isn't perfect for!

First, there's the fact that stuffed mushrooms are so super customizable.  I mean, think about it.  The mushroom base goes with practically any flavor.  That means, you can stuff them with virtually any combination of ingredients you can think of.  Sub out different kinds of cheeses, herbs, and add-ins every time you make them!

Sun-Dried Tomato and Basil Stuffed Mushrooms


Sun-Dried Tomato and Basil Stuffed Mushrooms are made with a decadent cheesy filling. They are an elegant, yet easy to make appetizer that is perfect for any occasion!

INGREDIENTS


1 lb. mushrooms
2 tablespoons butter
2 cloves garlic, minced
1/4 cup panko breadcrumbs
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup fresh parmesan cheese, shredded, plus more for topping
4 ounces cream cheese, softened
1 handful fresh basil
2 tablespoons sun-dried tomatoes packed in oil


INSTRUCTIONS


1. Preheat your oven to 400 degrees F. Wash the mushrooms and remove the stems. Chop the stems. Bake for 20 minutes.

2. Cook the mushrooms in the butter in a skillet over medium high heat for 4 minutes. Add the chopped garlic to the skillet and continue cooking for an additional 2 minutes, stirring often. Make a hole in the center of the pan, add the panko breadcrumbs, and continue cooking until the breadcrumbs are golden and toasted, about 3 minutes. Season with salt and pepper and remove from the pan to a bowl.

3. Combine the parmesan cheese, cream cheese, basil, and sun-dried tomatoes in a food processor or blender. Pulse to combine. (You can also chop the basil and sun-dried tomatoes by hand and mix them with the cheeses, but I find a processor to be much easier!)

4. Stir together the mushroom mixture and the cheese mixture. Stuff each mushroom cap with some of the filing and place onto a parchment lined baking sheet. Top each mushroom with additional shredded parmesan cheese.

5. Bake in the preheated oven for 20 minutes until the mushrooms are soft and the cheese is melted.
