Well, it was that one time a few years back that really sticks out as my favorite bonfire. My girlfriend made this amazing bean dip. Yes, I am admitting that it was my favorite bonfire because of beans. Naturally, we'll usually make a few snacks to munch on while we sit by the fire and this bean dip she made was so damn tasty, made entirely in the slow cooker, and super cheesy. It was really magical.
It was so good that I even went back for a second plate full of tortilla chips doused in the cheesy, beany goodness. I asked her what was in the recipe and was surprised that it was so simple and so easy to make.
I decided right then and there that I was going to make my own version of a crock pot bean dip. I can't believe that it has taken at least a year for this recipe to finally come to fruition, but it is so worth the wait!
I have officially declared this the best bean dip in the whole wide world.

I should disclose that this is an individual declaration. I haven't polled thousands of people or anything. But, I promise you, dip a few chips in this delish dip and you'll be saying it's the best of the best, too.
It's hot, it's cheesy, it's melty, and it is so so so easy to make. Dump the ingredients into the crock pot, give it a few stirs every now and then, and you have an appetizer that will be the hit of any party, game day, or Mexican fiesta! Enjoy!

This recipe for the World's Best Easy Cheesy Bean Dip is cooked in your crock pot and made with three kinds of cheese, green chilies, and Mexican spices. Make it for a party and everyone will want the recipe!
INGREDIENTS
1 (16 ounce) can refried beans
1 (4 ounce) can diced green chilies
1 cup pepper jack cheese, shredded
1 cup sharp cheddar cheese, shredded
1 (8 ounce pkg.) cream cheese, cubed
1/2 cup salsa
1 cup sour cream
2 tsps chili powder
1/2 tsp cumin
2 Tbsps green onions, sliced
1 (16 ounce) can refried beans

NOTES
This dip isn't super spicy, but if you prefer a milder dip, use less green chilies, plain monterey jack, and mild salsa.

- Combine all ingredients except for the green onions in a 3-quart slow cooker. Stir to combine. Cover and cook on low for 2 hours, stirring occasionally. Set crock pot to warm, top with additional shredded cheese, and green onions, if desired

DeleteI make a dip similar to this but I use Taco Seasoning, No Cumin or Green Chilies. Put it in 9x13 baking dish sprinkle more cheese on top. Bake at 350 for about 30 minutes. Delicious!
