A few years back, my husband and I took the kids and went to our friend's house for a bonfire. We get together for bonfires a few times every Fall and we look forward to it every year. It's nothing huge or crazy, just 6 or seven people sitting around a small fire pit while the kids play in the yard.

Well, it was that one time a few years back that really sticks out as my favorite bonfire.  My girlfriend made this amazing bean dip.  Yes, I am admitting that it was my favorite bonfire because of beans.  Naturally, we'll usually make a few snacks to munch on while we sit by the fire and this bean dip she made was so damn tasty, made entirely in the slow cooker, and super cheesy.  It was really magical.

It was so good that I even went back for a second plate full of tortilla chips doused in the cheesy, beany goodness.  I asked her what was in the recipe and was surprised that it was so simple and so easy to make.

I decided right then and there that I was going to make my own version of a crock pot bean dip.  I can't believe that it has taken at least a year for this recipe to finally come to fruition, but it is so worth the wait!

I have officially declared this the best cheesy bean dip recipe in the whole wide world.

Done and done.

It's hot, it's cheesy, it's melty, and it is so so so easy to make.  Dump the ingredients into the crock pot, give it a few stirs every now and then, and you have an appetizer that will be the hit of any party, game day, or Mexican fiesta!

How To Make Cheesy Bean Dip

Making homemade bean dip is super easy, especially when you prepare it in your slow cooker! This is the slow cooker I use. All you have to do is combine refried bean, green chilies, shredded cheddar cheese, shredded jack cheese, cream cheese, salsa , sour cream, chili powder, cumin, and green onions in you crock pot. How to Serve Bean Dip

Since this cheese and bean dip recipe cooks in a crock pot, an easy way to serve it is to simply keep it in the pot. You can reduce the heat to warm and place tortilla chips, plates, small bowls, and a ladle next to the pot so folks can make individual servings. If you do decide to transfer this dip to a bowl, it will thicken as it cools, so plan to serve it right away if you go that route.

Homemade Bean Dip Variations

Here are a few ways you can put a twist on your homemade simple cheesy bean dip:
  • Extra beans: For an extra beany dip, drain and rinse a can of black beans and mix them into the dip before cooking.
  • Add some spice: Like your dip spicy? Use hot salsa for an extra kick.
  • Veg it up: For a pop of color and some added veggies, add a can of drained corn to the dip.
  • Yogurt swap: Sour cream and Greek yogurt can be used interchangeably in this recipe.

What to Do With Leftover Bean Dip

Leftover cheesy refried bean dip can be used in lots of different ways! Add some leftover cheesy bean dip to a omelet, mix it into casseroles or soups, or serve it over nachos or tacos. You can also freeze it and enjoy it again in a few months!

How To Store Cheesy Bean Dip

To store bean dip, cool it completely on the counter, transfer it to an airtight container, and store it in the refrigerator for up to 4 days. This dip can also be frozen for up to 3 months.

INGREDIENTS

1 (16 ounce) can refried beans
1 (4 ounce) can diced green chilies
1 cup pepper jack cheese, shredded
1 cup sharp cheddar cheese, shredded
1 (8 ounce pkg.) cream cheese, cubed
1/2 cup salsa
1 cup sour cream
2 teaspoons chili powder
1/2 teaspoon cumin
2 tablespoons green onions, sliced


INSTRUCTIONS

  1. Combine all ingredients except for the green onions in a 3-quart slow cooker.  Stir to combine.  Cover and cook on low for 2 hours, stirring occasionally.  Set crock pot to warm, top with additional shredded cheese, and green onions, if desired.


NOTES

This dip isn't super spicy, but if you prefer a milder dip, use less green chilies, plain Monterey jack cheese, and mild salsa.

  2. I make a dip similar to this but I use Taco Seasoning, No Cumin or Green Chilies. Put it in 9x13 baking dish sprinkle more cheese on top. Bake at 350 for about 30 minutes. Delicious!
