A few years back, there was this one time when my husband and I took the kids and went to our friend's house for a bonfire. We get together for bonfires a few times every Fall and we look forward to it every year. It's nothing huge or crazy, just 6 or seven people sitting around a small fire pit while the kids play in the yard.

Well, it was that one time a few years back that really sticks out as my favorite bonfire.  My girlfriend made this amazing bean dip.  Yes, I am admitting that it was my favorite bonfire because of beans.  Naturally, we'll usually make a few snacks to munch on while we sit by the fire and this bean dip she made was so damn tasty, made entirely in the slow cooker, and super cheesy.  It was really magical.

It was so good that I even went back for a second plate full of tortilla chips doused in the cheesy, beany goodness.  I asked her what was in the recipe and was surprised that it was so simple and so easy to make.

I decided right then and there that I was going to make my own version of a crock pot bean dip.  I can't believe that it has taken at least a year for this recipe to finally come to fruition, but it is so worth the wait!

INGREDIENTS

1 (16 ounce) can refried beans
1 (4 ounce) can diced green chilies
1 cup pepper jack cheese, shredded
1 cup sharp cheddar cheese, shredded
1 (8 ounce pkg.) cream cheese, cubed
1/2 cup salsa
1 cup sour cream
2 tsps chili powder
1/2 tsp cumin
2 Tbsps green onions, sliced

INSTRUCTIONS

  1. Combine all ingredients except for the green onions in a 3-quart slow cooker.  Stir to combine.  Cover and cook on low for 2 hours, stirring occasionally.  Set crock pot to warm, top with additional shredded cheese, and green onions, if desired


NOTES

This dip isn't super spicy, but if you prefer a milder dip, use less green chilies, plain monterey jack, and mild salsa.

  2. I make a dip similar to this but I use Taco Seasoning, No Cumin or Green Chilies. Put it in 9x13 baking dish sprinkle more cheese on top. Bake at 350 for about 30 minutes. Delicious!
