- Box lemon cake mix: Any standard box of lemon cake mix will work. Duncan Hines and Betty Crocker are popular, but store brand works, too.
- Eggs: Use 2 large eggs straight from the refrigerator.
- Vegetable oil: Canola oil is a good swap.
- White chocolate chips: I do not recommend regular chocolate chips for this recipe. Stick with white!

INGREDIENTS
1 box lemon cake mix
2 large eggs
1/4 cup vegetable oil
1/2 cup white chocolate chips

INSTRUCTIONS
- Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, stir together the cake mix, vegetable oil, and eggs. Stir in the white chocolate chips.
- Portion the cookies into 1 1/2-inch balls. (Roll the cookie dough into balls with your hands.) Press additional chocolate chips into the tops of the cookies, if desired.
- Bake 2 inches apart on the parchment-lined baking sheet for 17 minutes. Remove from the oven, let the cookies sit on the baking sheet for 2 minutes, and then transfer the cookies to a cooling rack.
NOTES
You will need to bake these cookies in several batches and on multiple cookie sheets to ensure they are spaced out enough.
