Kohlrabi and Apple Salad

This Kohlrabi and Apple Salad is light and fresh featuring crisp kohlrabi and apples tossed with a tangy vinaigrette and sharp gouda cheese. It's a little sweet, a little savory, and unexpectedly delicious!

I'm going to be honest. I've never met anyone who actively sought and bought kohlrabi to use at home in their kitchen.

Kohlrabi is one of those fairly obscure and unique vegetables that would likely leave most scratching their heads when it shows up in their local CSA box.

This was exactly my experience when I came to acquire the kohlrabi used in this recipe.

One thing that I can say for sure is that I am so glad I have been introduced to this fabulously crisp veggie because it is surprisingly delicious!

If you have the opportunity to pick up some kohlrabi, I highly suggest you try it in its raw for in this easy to make side salad.

Give it a shot. You won't regret it!

HOW TO MAKE KOHLRABI AND APPLE SALAD

All you need to make kohlrabi and apple salad is some knife skills! First, you julienne apples. Then, you quarter, peel, and julienne kohlrabi The julienned kohlrabi and apples are combined in a bowl and tossed with a dressing made from olive oil, vinegar, mustard, maple syrup, salt, and pepper. The salad is finished with gouda cheese and chives. See below for detailed recipe instructions.

WHAT IS KOHLRABI

Kohlrabi is a crisp cruciferous vegetable like broccoli and cauliflower. Both purple and green kohlrabi have the same inner flesh. Kohlrabi can be eaten either raw or cooked and has a similar taste to broccoli stems.

WHAT DOES JULIENNE MEAN?

To julienne means to cut food into short, thin, matchstick-size pieces.

WHAT KIND OF APPLES SHOULD I USE?

This recipe will work best with crisp, sweet apples. My favorite apples to use in this salad are Gala or Fuji apples.

Kohlrabi and Apple Salad


This Kohlrabi and Apple Salad is a light and fresh salad featuring crisp kohlrabi and apples tossed with a tangy vinaigrette and sharp gouda cheese. It's a little sweet, a little savory, and unexpectedly delicious!

INGREDIENTS


2 small kohlrabi
2 large or 3 small apples
6 tablespoons olive oil
2 tablespoons apple cider vinegar
2 teaspoons maple syrup
2 teaspoons whole-grain mustard
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 tablespoon chives, chopped
1/2 cup gouda cheese, shaved


INSTRUCTIONS


1. Cut the apple into quarters and cut out the core. Julienne the apples with the skin on. Cut the ends off of the kohlrabi and cut into quarters. Cut out the tough center core. Use a vegetable peeler to peel the outer tough skin. Julienne the kohlrabi. In a large bowl, combine the kohlrabi and apples.

2. In a small bowl, whisk together the olive oil, vinegar, maple syrup, mustard, salt, and pepper. Pour over the kohlrabi and apples and toss to coat.

3. Stir in half of the gouda cheese, then top with the remaining gouda cheese and chives.
