HOW TO MAKE BELL PEPPER, TOMATO, AND MOZZARELLA SALAD

This summer salad is made by combining grilled bell peppers with tomatoes, red onion, and mozzarella cheese tossed with a homemade balsamic vinaigrette. See below for detailed recipe instructions.

WHAT IS "FRESH" MOZZARELLA CHEESE?

Fresh mozzarella is mozzarella cheese sold in brine. Fresh mozzarella has a moist, soft texture that is perfect for this salad. You can substitute cubed fresh mozzarella for mozzarella pearls (small round pieces of fresh mozzarella sold in brine).

CAN THIS SALAD BE MADE IN ADVANCE?

Yes! This salad can be made a day in advance. Store covered in the refrigerator until ready to serve.

DO I HAVE TO GRILL THE PEPPERS?

The bell peppers are really the star of this recipe. When the peppers are grilled, their sweetness really pops! The little charred bits add a dimension of flavor that beats any other method of preparation. If you don't have a grill, you can roast the peppers in the oven, but grilling should be your first choice, if possible.
