I am a firm believer in a well-stocked pantry.  I think that if you have a nice variety of ingredients in your cupboard, there are always plenty of options when it comes to 'what's for dinner'.  We don't eat a ton of canned veggies in our house, but I think it's a good idea to keep some on hand anyway.  There have been times when I have needed a veggie in a pinch, and I was glad my canned vegetable back-ups!

One of the veggies I always keep stocked in my pantry is canned corn.  I grew up eating canned corn, so I know it can be great served on its own or used as an ingredient in a recipe.  You can use canned corn in soups, in dips, in breads, and served as simple side dish.

Now, let's take just a minute to discuss that glorious brown butter.  You know what I'm talking about, right?  If not, I'll fill you in.  Brown butter is butter that is cooked until it turns a gorgeous golden brown color and develops a rich nutty flavor.  That's it!  Brown butter is simply butter that is cooked until it's brown.  It's nothing complicated and so easy to make.

Brown Butter Parmesan Corn


This Brown Butter Parmesan Corn recipe transforms canned corn into an holiday-worthy side dish in just minutes!

INGREDIENTS


4 tablespoons butter
1 clove garlic, minced
2 (15 ounce) cans corn, drained
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
3 tablespoons parmesan cheese, grated


INSTRUCTIONS


1. In a medium saucepan, heat the butter over medium heat for five minutes until browned, stirring occasionally. Add the garlic to the pan and cook for 30 seconds.

2. Add the corn to the brown butter and season with salt and pepper.

3. Cover and cook for 5 minutes, stirring occasionally.

4. Transfer the corn to a serving dish and top with the parmesan cheese.


NOTES


Make sure when you are browning your butter that you don't overcook it. It should be golden brown with a nutty smell. If it cooks too much, it will turn black and burn.
