- Frozen waffle fries: Use a standard bag of frozen waffle fries and bake them according to the package directions before adding the toppings. If you do not have waffle fries, steak fries or potato wedges are the closest swap.
- Olive oil: I use extra virgin olive oil.
- Lemon juice: Fresh lemon juice gives the dressing the brightest flavor, but bottled lemon juice works if that is what you have.
- Garlic: Mince the garlic finely so it blends smoothly into the dressing.
- Fresh parsley: Fresh parsley is best for this recipe. Mince it finely before adding it to the dressing.
- Fresh rosemary: Fresh rosemary should be minced very small so it mixes evenly into the dressing.
- Dried oregano: Use standard dried oregano from your spice cabinet.
- Kosher salt: Use kosher salt for the dressing as written. If you use table salt, start with less.
- Black pepper: Freshly ground black pepper is a good choice, but regular black pepper works too.
- Feta cheese: Crumbled feta is the easiest option, but a block of feta can be crumbled by hand if needed.
- Grape tomatoes: Grape tomatoes hold their shape well. Cherry tomatoes are a good substitute.
- Red onion: Finely chop the red onion so you get a little bit in each bite without large raw pieces.
- Pepperoncini peppers: Use jarred sliced pepperoncini or slice whole pepperoncini rings thinly before topping the fries.

1/2 cup grape tomatoes, quartered
1/4 cup red onion, finely chopped
1/4 cup pepperoncini peppers, thinly sliced
