Loaded Cauliflower Steaks

Loaded Cauliflower Steaks are thick roasted cauliflower slices loaded up with cheddar cheese, crumbled bacon, sliced green onions, and sour cream. This is the best way to eat cauliflower!

I am a firm believer that cauliflower is totally underrated. Look past cauliflower's recent popularity (ie cauliflower pizza crust, cauliflower rice, etc), and I think cauliflower as a whole is underappreciated. I love, love, love it!

It's one of my favorite veggies to eat no matter how you prepare it. It's amazing raw, roasted, or mashed.

My newest cauliflower obsession, cauliflower steaks, celebrate cauliflower in its truest form. Nice, big, hunky slices of cauliflower are roasted in the oven until the edges are nice and caramelized, and it's truly a cauliflower lover's dream.

When you top those slices with melted cheddar, crispy bacon, sour cream, and green onions, it makes cauliflower truly irresistible.

WHAT ARE CAULIFLOWER STEAKS?

Cauliflower steaks are made by slicing a whole head of cauliflower into thick slices. The slices, or steaks, are then cooked.

HOW TO MAKE CAULIFLOWER STEAKS

To make cauliflower steaks, first, trim the leaves and stem from the cauliflower. Then, slice the cauliflower into 3/4-inch slices. Drizzle the slices with olive oil, season with salt, pepper, smoked paprika, and garlic powder, and roast on a baking sheet at 425 degrees F for 30 minutes. The slices are topped with shredded cheddar cheese and returned to the oven until the cheese melts. Finally, they are topped with crumbled bacon, sliced green onions, and sour cream. WHAT TO EAT WITH CAULIFLOWER STEAKS

Cauliflower steaks can be eaten as a light main dish or as a side dish served alongside main dish proteins like chicken, beef, or pork. Try them with grilled chicken, meatloaf, steak, or pork tenderloin!

HOW TO STORE LEFTOVER CAULIFLOWER STEAKS

Store leftover cauliflower steaks covered in the refrigerator for up to 4 days. Cauliflower steaks are best reheated in a toaster oven or air fryer as opposed to the microwave.

Loaded Cauliflower Steaks


Loaded Cauliflower Steaks are thick roasted cauliflower slices loaded up with cheddar cheese, crumbled bacon, sliced green onions, and sour cream. This is the best way to eat cauliflower!

INGREDIENTS


1 head cauliflower
4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled bacon
3 tablespoons sour cream
3 tablespoons green onions, sliced


INSTRUCTIONS


1. Preheat your oven to 425 degrees F. Remove the leaves and cut the stem off of the cauliflower leaving the core of the cauliflower intact. Slice the cauliflower into 3/4-inch slices. (You end up with loose florets from the outer slices that you can roast alongside the steaks and three whole slices.)

2. Drizzle a baking sheet with half of the olive oil. Place the cauliflower steaks on the pan and drizzle with the remaining oil. Mix together the salt, pepper, garlic powder, and smoked paprika in a small bowl and season both sides of the cauliflower slices.

3. Roast in the preheated oven for 15 minutes. Remove from the oven, carefully flip the steaks, and continue roasting for an additional 15 minutes. Top the cauliflower with the shredded cheddar cheese and return to the oven for 2 minutes or until the cheese is melted.

4. Top the cauliflower with crumbled bacon, sour cream, and green onions.
