HOW TO MAKE FRIED SHRIMP

To make pan-fried shrimp, dredge fresh peeled shrimp in seasoned flour, egg, and breadcrumbs and then fry in hot vegetable oil until golden brown. See below for detailed recipe instructions.

WHAT KIND OF PAN SHOULD I USE TO FRY SHRIMP?

My favorite kind of pan for frying shrimp is a large cast iron skillet. If you don't have a cast iron skillet, you can use any high-sided heavy-bottomed skillet, just not a thin standard frying pan.

WHAT KIND OF OIL SHOULD I USE TO FRY SHRIMP?

When frying shrimp, choose an oil with a high smoke point like vegetable oil, canola oil, or peanut oil.

WHAT SIZE SHRIMP IS BEST FOR FRIED SHRIMP?

This recipe for the best fried shrimp uses large fresh shrimp. Fresh shrimp is sold by the count, so look for shrimp that measures 21/25, meaning 21 to 25 shrimp per pound. You can use smaller shrimp, but you risk the shrimp being overcooked before they are golden brown.

prep time: cook time: total time: 35 MIN

INGREDIENTS

1 pound large shrimp (21-25), peeled and deveined, tail-on
1 tablespoon Cajun seasoning
1/2 cup flour
1 1/4 cups panko breadcrumbs
2 eggs, beaten
1 teaspoon hot sauce
vegetable oil, for frying cocktail sauce, for dipping

INSTRUCTIONS

1. Fill a large cast iron skillet 2/3 full with vegetable oil (around 1 1/2 inches deep). Heat to 350 degrees F.

2. Meanwhile, combine flour and Cajun seasoning in a shallow dish. Whisk together the eggs and hot sauce in another shallow dish. Pour the panko breadcrumbs into a third shallow dish.

3. Dredge the shrimp one at a time in the flour, then the egg mixture, then the panko breadcrumbs, pressing the breadcrumbs onto all sides of the shrimp.

4. Fry the shrimp in batches so that none of the shrimp are touching when frying. Fry for 1 minute, carefully flip, and fry for an additional minute until golden brown.

5. Transfer the shrimp to a paper towel-lined plate and serve immediately.
