The chicken I use in this dish is shredded chicken. White or dark meat. This meal is perfect for using up some leftover rotisserie chicken if you've got it! I used chicken leftover from a whole chicken I made the other night. If you don't have any leftover chicken, you can use this simple and easy recipe to make shredded chicken in the instant pot. It's my favorite way to make shredded chicken for meal prep! You could also try this recipe with taco meat.

Cheesy Chicken Tortilla Pie is a savory skillet casserole meal that has layered ingredients and is baked in the oven. Flour tortillas, cooked shredded chicken, salsa, plain greek yogurt, and shredded cheese are used to make the layers. See below for detailed recipe instructions.

DO I HAVE TO USE A CAST IRON SKILLET?

This tortilla pie is baked in a 10 or 12-inch cast iron skillet. If you don't have a skillet, you can use a deep dish pie plate or a large round glass baking dish. If you use a smaller dish, the pie will turn out taller than pictured.

SHOULD I USE FLOUR TORTILLAS OR CORN TORTILLAS?

This recipe uses flour tortillas. You can substitute corn tortillas, but they will soften considerably more than the flour tortillas when baked. I prefer the flour tortillas to help stabilize the cheesy layers.

IS THIS CHICKEN TORTILLA PIE SPICY?

The beauty of this recipe is that you can adjust the heat to your liking! If you prefer a mild dish, use plain monterey jack cheese and mild salsa. If you prefer a little kick, go with pepper jack cheese and medium or hot salsa!

Cheesy Chicken Tortilla Pie


Cheesy Chicken Tortilla Pie is made with layers of flour tortillas, shredded chicken, salsa, plain greek yogurt, and lots of melty, delicious cheese. You will love how quickly this easy dinner recipe comes together!

INGREDIENTS


2 cups cooked chicken, shredded
6 (8-inch) flour tortillas
1 cup salsa
1/2 cup plain greek yogurt
1 1/2 cups pepper jack cheese
1 1/2 cups sharp cheddar cheese
1/4 cup red onion, chopped, as a garnish
guacamole, salsa, plain greek yogurt, as a garnish


INSTRUCTIONS


1. Preheat your oven to 400 degrees F.

2. In a large bowl, stir together the shredded chicken and 1/2 cup of the salsa. In another bowl, combine the shredded pepper jack cheese and cheddar cheese.

3. Place 2 tortillas in the bottom of the skillet, cutting one in half and arranging them to cover the bottom of your skillet. Top the tortillas with half of the chicken. Top the chicken with 1/4 cup salsa and a 1/4 cup greek yogurt. Spread the greek yogurt and salsa with a spoon to cover the chicken. Top with 1/3 of the shredded cheese.

4. Repeat with another layer of tortillas, chicken, salsa, greek yogurt, and shredded cheese.

5. Finish with a last layer of tortillas and the remaining cheese. Bake in the preheated oven for 20 minutes. Let sit for 5 minutes before slicing and serving with salsa, greek yogurt, guacamole, and chopped red onion.


NOTES


For a mild, less spicy casserole, use plain monterey jack cheese and mild salsa.

If you do not have a cast iron skillet, a deep-dish pie plate or a large round glass baking dish will work.
