SHOULD I USE CREAM OR MILK IN MY SOUP?

You can use cream or milk to make your soup extra creamy. Heavy cream will make a more rich soup, but milk works, too, if that's what you've got on hand. If you use milk, I suggest using whole milk.

Instant Pot Cheesy Cauliflower and Ham Soup

INGREDIENTS

1 tablespoon oil
1 small onion, diced
3 cloves garlic, minced
1 head cauliflower, cut into florets
1 potato, peeled and diced
3 cups chicken stock
2 cups white cheddar cheese, shredded
4 oz cream cheese, softened
1 teaspoon salt
1 teaspoon pepper
1/2 cup heavy cream or whole milk
1 cup cooked ham, diced
sliced green onions, optional

INSTRUCTIONS

  1. Set your instant pot to Saute. Add the oil to the pot. Cook the onions in the oil for 3 minutes. Add the garlic and cook for 1 additional minute.
  2. Add the cauliflower florets, diced potato, and chicken stock to the pot.
  3. Place the lid onto your instant pot and turn the steam valve to the sealing position.
  4. Select the manual/pressure cook, high pressure setting and set the time to eight minutes. After 10 seconds the display will say On. Once the instant pot is pressurized, the float valve will rise and the cook timer will begin counting down.
  5. At the end of the eight minutes, carefully turn the steam release valve to the venting position. When the float valve drops, open the instant pot. Set the instant pot setting to Keep Warm.
  6. Use an immersion blender to blend the soup until smooth. (If you don't have an immersion blender, carefully transfer the mixture in small batches to your blender and blend until smooth. Then, return to the instant pot to finish.)
  7. Stir in the shredded cheese, softened cream cheese, salt, and pepper. Stir until the cheese is completely melted. Stir in the cream or milk, whichever you are using. Stir in the diced ham.
  8. Serve immediately topped with diced green onions, if desired.


NOTES

Recipe time does not include the time it takes for your instant pot to come to pressure.

For the oil, you can use canola, vegetable, or olive oil. All will work!

For a vegetarian soup, omit the ham and sub vegetable broth for the chicken stock.

If the soup is too thick for your liking, add more heavy cream or milk to thin to your desired consistency.
