If you are looking for the perfect appetizer to serve on St. Patrick's Day, this is it! This is no ordinary cheese dip. This dip is thick, rich, and boldly flavored with your favorite Irish beer, Guinness Stout!

Now, don't be turned off if beer is not your thing. The flavor of this full-bodied beer is complimented by lots and lots of cheddar cheese, so if you're a fan of cheddar but not beer, I say give this dip a shot!

This dip is made with sharp cheddar, mild cheddar, and cream cheese as the base with a hint of mustard and some garlic powder.

I'm a big fan of dipping with tortilla chips, but there are so many options for dipping that would be delicious! Try dipping pretzels or fresh veggies, too. I even loaded up a hot dog with some of my leftover dip for the best cheese dog I've ever had. Yum!

One important note on the cheese used in this recipe.  I highly suggest shredding cheese from a block instead of buying pre-shredded cheese.  Pre-shredded cheese sold in a block has an anti-caking chemical added to it that does not work well with melted dips like this.  Buy a block and break out the cheese grater for this one!

If you substitute the cheddar for another cheese, make sure it's a good melting cheese like Monterey Jack.  Hard cheese like parmesan would not work very well.

Slow Cooker Guinness Beer Cheese Dip is a bold Irish beer flavored cheese dip that is perfect for St. Patrick's Day!

INGREDIENTS


12 oz Guinness Stout beer
16 oz sharp cheddar cheese, shredded
8 oz mild cheddar cheese, shredded
1 tablespoon spicy brown mustard
16 oz cream cheese, softened
1/2 teaspoon garlic powder


INSTRUCTIONS


1. Combine all of the ingredients in your slow cooker and stir to combine. Cook on high for 1 hour, stirring every 20 minutes.

2. Keep in the crock pot on the warm setting to serve.


NOTES


This dip is best severed fresh but can be reheated slowly, stirring frequently to avoid separation.

  1. Made this for a recent party. End product was grainy. Not sure if it didn't melt correctly or split. Followed directions and used "block" (Kerrygold) cheese. ??

  3. I cooked mine for over two hours and I agree it was grainy and the cream cheese wouldn't melt. Didn't like the taste either.

  5. I made this 10/7/23 true to the recipe. It was only ok, when I was certain, given the ingredients, it would be delish. As with the other comments I found that the cream cheese was a bit curdled, for lack of a better term. I used my blender stick to overcome this and it did the trick. I wish I knew what would make for a better combination, so I will keep looking.

  6. Made this last night, it turned out good! I made sure the ingredients were room temp before turning the crock on high. I stirred it with a wisk several times while heating. I also added some garlic powder and chipotle Tabasco sauce so for depth of flavor. This recipe was a hit, nice job.
