Do you ever find yourself in a cooking rut? Like, every time you go to the store you end up coming home with the same four or five meals week after week? I do. All the time. Yes, even as a food blogger, I find myself longing for some creative inspiration to get me out of my cooking ruts.
Want to know how I combat the humdrum of my usual menu? I send my husband to the store to do the shopping every now and then. I'm telling you, it works like a charm!
How does sending my honey to the store correct my lack of inspiration at dinner time? You see, when I send my husband to go "pick up a few things" he, nine times out of ten, comes home with something I wouldn't have bought.

That was the case with this particular sirloin tip roast that I used for this recipe. I buy chicken, whatever steak is on sale, ground beef, and the occasional kielbasa or hot dogs, but for some reason, I don't always browse the oven roasts.
After my husband brought home this inexpensive roast, I decided I was going to have to shop for them more often because, oh my goodness, it was good! You might think that by buying a less expensive cut of meat that you will end up with chewy, over-cooked, yucky beef, but that is SO not the case!

A nice slow roast in the oven followed by a bit of time for the meat to rest yields tender, juicy, delicious meat every time. Naturally, you should use a meat thermometer to achieve your desired doneness, but the following cooking instructions below were just right for our family.
Whatever you do, don't skip the rub. The flavor is out of this world and it is so easy to throw together. I hope you love this budget-friendly dinner as much as we did. Enjoy!
