If there's one thing I always have stocked in my freezer, it's bananas.  Whenever I come across bananas that are marked down in price, I scoop up as many as my freezer space will allow.  I am, admittedly, slightly obsessed with discount bananas.

You might be wondering why I love frozen bananas so much. Well, that answer is easy. Frozen bananas make the most amazing frozen sweet treats ever! Did you know that if you process frozen bananas in a food processor that it comes out just like soft serve ice cream? Uh, yeah. It’s like magic. Delicious healthy ice cream magic. I make a ton of that Frozen Banana Ice Cream and banana smoothies for the kids all summer long and they LOVE it!

My last discount banana haul was ridiculously huge, so I had bunches and bunches of bananas to get creative with. I decided that in addition to making the kids treats with all of those frozen bananas, I was going to make myself a treat this time around, too. That’s right, I made myself a big ole batch of frozen daiquiris to sip on by the pool. Can I just say, best decision ever?!

These daiquiris were the perfect blend of sweet and sour and extra creamy thanks to the frozen bananas. I hate when daiquiris have too much ice blended into them and they end up all watery instead of thick and delicious. The frozen bananas work wonders for the consistency we’re going for here!

The banana and citrus combo is surprisingly delish and everything comes just together perfectly. You can add more ice if your daiquiri is too slushy, but I found one cup full of cubes to be just right. I can’t wait to make these all summer long!


Frozen Banana Daiquiri

Yield: 2-3 daiquiris

Ingredients
  • 3 frozen bananas
  • 1/3 cup light rum
  • 1/3 cup dark rum
  • 1/4 cup orange juice
  • 1/2 lime, juiced
  • 2 Tbsp powdered sugar
  • 1-2 cups ice cubes
  • 2 Tbsps banana liqueur (optional)

Instructions
  1. In a blender, combine the bananas, rum, orange juice, lime juice, sugar, banana liqueur, and 1 cup ice cubes.  Blend until smooth.  Add more ice cubes and blend again to thicken, if desired.  Pour into glasses and serve.

Notes
  • Try substituting coconut rum, spiced rum, or banana rum for fun flavor twists!
