Football season is right around the corner. Are you ready for some footbaaaaaall?

We're not. I actually laughed out loud as I typed that.

You see, my husband and I are a rare breed. We don't watch sports. I know, I know...how utterly un-American of us. Don't hate me. We all have our quirks.

Sure, I was a cheerleader in high school and my husband knows the rules of the game, we just don't get into it like most others we know (namely my mother-in-law who hoots and hollers at the TV like her words are gonna carry those boys right into the end zone).

What I do like about football season is the foooood. There's nothing like a game day spread to make your mouth water. This dip will fit right in, I assure you. Put it on the coffee table in front of the crowd and watch it disappear. I first had it at my sister-in-law Holly's house and watched people literally flock around it. The heat is perfectly addicting and you just can't stop eating it. So, so good.

Everywhere I bring it, people ask me for the recipe and are shocked to learn there are only three ingredients in this amazing cream cheese sausage dip. It seriously takes just minutes to throw together, so you should really give it a shot!

  • Pork Hot Sausage: Use a roll-style hot sausage, like Jimmy Dean, and choose mild if you prefer less heat.
  • Cream Cheese: Use a block of regular cream cheese, and substitute Neufchatel in an equal amount if desired.
  • Ro*tel Tomatoes: Use the Original variety as written, but you can substitute Mild Ro*tel if you like a lower heat level.

Sure! After browning the sausage, combine all of the ingredients in a small slow cooker over low heat until the cream cheese melts, stirring occasionally. Switch it to warm and you've got nice warm dip for the whole event...that is if it lasts that long!

Rotel tomatoes are canned diced tomatoes with green chilies and spices.

Can you make sausage dip ahead of time?

Yes! Sausage dip can be made several days in advance with no decline in texture or taste.

16 oz pork hot sausage
12 oz cream cheese
1 can Ro*tel tomatoes (Original), undrained



INSTRUCTIONS

  1. Brown sausage in a non-stick skillet, breaking it up into crumbles with a spatula until no longer pink. Drain the grease.
  2. In a medium saucepan, heat the tomatoes and cream cheese over medium heat, stirring occasionally. Heat until the cream cheese is completely melted.
  3. Add the browned sausage to the cream cheese mixture and stir to combine. A splash or two of milk can be mixed in if you like a slightly looser dip. We like it thick and hearty! Serve with tortilla chips or your favorite dipping chip.

    1. I'm not sure. The tomatoes have green chilies that add a little kick and the juice from the can helps to thin the cream cheese. Not sure if anything but a can of tomatoes would work.

  9. We serve this at the annual Christmas Party at the VFW. We do it the easy way 1lb. sausage, 1 lb. cheese and 1 can rotel. We get the 3 lb. box of cream cheese at Sam's and we always run out.

  15. Sorry folks...just made this and neither my husband nor I liked it. The recipe says to use a can of Rotel, Undrained. Are you sure I shouldn't have drained it? The dip was a pink color and it was really bland. The sausage tasted good. I had to throw it out because I didn't want to take it to the party we were going to. Not doing this one again...

    1. I'm sorry you didn't enjoy it as much as we do! I do not drain the tomatoes. The dip does have a pink hue, that is normal. Usually between the hot sausage and the tomatoes, the dip has enough kick for our family.
