Cheesy Beef and Bean Burrito Bake

This Cheesy Beef and Bean Burrito Bake is packed with cheese smothered flour tortillas filled with a ground beef and black bean filling. It's a great weeknight dinner option!

I feel like I could eat Mexican food every single night of the week. I will admit that most of the Mexican I cook is Americanized versions of authentic Mexican cuisine.

I do love the rich flavors and bold spices used in Mexican cooking, though, so I use them in my American versions any time I can.

This time around I made delicious baked burritos smothered in cheese and baked in a casserole dish!

Yup, Americanized.  But incredibly yummy!

I didn't roll the burritos in the traditional way with tucking in the ends of the tortillas, but I did use lots of beans and a tasty, simple burrito seasoning.

And cheese. Lots and lots of cheese. What can I say? Everything's better with cheese!

All of that being said, if you're cool with cheesy, yummy, easy-to-make Mexican-inspired meals, I think you're going to dig this one.

HOW TO MAKE BAKED BEEF AND BEAN BURRITOS

Baked beef burritos can be made in a few simple steps. First, onions and garlic are cooked with ground beef. The grease is drained off and the beef is seasoned with chili powder, cumin, paprika, salt, taco sauce, and a little bit of water. Then, black beans and shredded cheese are mixed in. The meat mixture is rolled in flour tortillas, topped with more shredded cheese, and baked at 350 degrees for 15 minutes. See below for detailed recipe instructions.

WHAT KIND OF TORTILLAS TO USE FOR BURRITOS

Burritos are made with flour tortillas. Normally, burritos are made with large burrito-size tortillas, but for this recipe, I like to use soft taco-size tortillas. They don't include any folding of the ends and they fit perfectly in the casserole dish.

WHICH BEANS SHOULD I USE IN BURRITOS?

One thing that you've got to have in burritos is beans! I like to use black beans in my burritos, but pinto beans or refried beans would also be delicious. If you use refried beans, I suggest heating and spreading them onto the tortillas instead of mixing them into the ground beef. If you do decide to eliminate the beans altogether, I suggest adding a little bit more ground beef so that you will have enough filling for the tortillas.

OPTIONAL BURRITO ADD-INS

You can totally make burritos to suit your tastes! Some optional burrito add-ins include:
  • corn 
  • rice 
  • sauteed bell peppers and onions 
  • chopped tomatoes 
  • salsa 
  • shredded cheese 
  • sliced avocado

WHAT TO SERVE WITH BURRITOS

Burritos can be served on their own, but I like to serve them with a side of shredded lettuce, some salsa, and some sour cream or plain greek yogurt. A side of chips and Restaurant-Style Salsa with Chipotle Peppers never hurts either!

HOW TO REHEAT BAKED BURRITOS

You can reheat individual servings of the burritos in the microwave, or you can reheat covered in foil in the casserole dish for 20 minutes at 350 degrees F removing the foil for the last five minutes.

Cheesy Beef and Bean Burrito Bake


This Cheesy Beef and Bean Burrito Bake is packed with cheese-covered flour tortillas filled with a ground beef and black bean filling. It's a great weeknight dinner option!

INGREDIENTS


1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 lb ground beef
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 cup taco sauce
1/4 cup water
1 can black beans, drained and rinsed
1 cup cheddar cheese, shredded
1 cup pepper jack cheese, shredded
6-8 soft taco size flour tortillas


INSTRUCTIONS


1. Preheat your oven to 350 degrees F. Lightly grease a 9 x 13 baking dish.

2. In a large skillet over medium-high heat, cook the onions and garlic in olive oil for 2 minutes, stirring frequently.

3. Add the ground beef to the skillet and cook until brown and crumbled. Drain the grease from the skillet.

4. Add the chili powder, cumin, paprika, salt, taco sauce, and water to the skillet and mix well. Stir in the black beans. Simmer for 3 minutes.

5. Stir in half of the pepper jack cheese and half of the cheddar cheese. Remove the skillet from the heat and let the meat mixture sit for several minutes to slightly cool.

6. Spoon about 1/2 cup of the meat mixture onto each tortilla. Roll up the tortillas and carefully transfer them to the baking dish. Top the burritos with the remaining shredded cheese.

7. Bake in the preheated oven for 15 minutes.


NOTES


The number of tortillas you use will depend on if you omit the black beans, how big your dish is, and how many add-ins you use.
