We all get in a dinnertime rut every now and then.  It happens to the best of us.  For me, once Fall rolls around and our family's daily schedule fills up with school, sports, and social activities, it starts to feel like we eat the same three things over and over and over.

This recipe features a quick skillet chicken that I paired with Alexia Riced Vegetable Pilaf with Sea Salt and Thyme as well as the Mashed Cauliflower with Butter and Sea Salt.  The chicken and sauce cook in one skillet while you easily prepare the Alexia sides.  It all comes together in less than 30 minutes!

The riced vegetable pilaf is a combination of riced cauliflower and butternut squash and had a distinct ground black pepper kick that paired perfectly with the cheesy mustard sauce.

The mashed cauliflower is made with sea salt, rich cream, and a touch of butter. It was the perfect bed for the golden chicken and bold sauce!

I topped it all off with some crushed pretzels, because...why not?!  They gave the dish a little bit of texture and a little twist of fun.

Mustard Cheddar Chicken with Alexia Mashed Cauliflower and Riced Vegetable Pilaf


Mustard Cheddar Chicken is an easy skillet dinner featuring pan-seared chicken covered in a cheesy mustard herb sauce and topped with crushed pretzels. Serve with Alexia Premium Vegetables for a complete meal that's made in just 30 minutes!

INGREDIENTS


3 boneless, skinless chicken breasts
salt and pepper
2 tablespoons olive oil
1/4 cup onion, finely chopped
1 clove garlic, minced
1 1/2 cups chicken stock
1/4 cup heavy cream
3 tablespoons dijon mustard
1 teaspoon fresh oregano, minced
1 teaspoon fresh parsley, minced
1 tablespoon cornstarch
1 tablespoon water
1 cup sharp cheddar cheese, shredded
2 tablespoons pretzels, crushed
Alexia Riced Vegetable Pilaf with Sea Salt and Thyme
Alexia Mashed Cauliflower with Butter and Sea Salt

INSTRUCTIONS


1. Pound chicken to one thickness. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper on both sides and place into the hot pan. Cook for 4 minutes on each side. Remove from the pan and set aside.

2. Add the onions and garlic to the skillet and cook for one minute, stirring frequently. Pour the chicken stock into the skillet and scrape the bits off of the bottom of the pan. Add the heavy cream, dijon mustard, oregano, and parsley to the skillet and stir until combined. Return the chicken to the skillet, cover, and reduce heat to low. Cook for 10-15 minutes, until the chicken is cooked through.

3. Meanwhile, prepare the Riced Vegetable Pilaf with Sea Salt and Thyme and the Mashed Cauliflower with Butter and Sea Salt according to the package directions.

4. Remove the chicken from the skillet and transfer to a serving platter. Mix together the cornstarch and water and stir into the sauce.  Simmer for several minutes until sauce thickens.  Stir in the cheddar cheese and continue stirring until melted. Season with salt and pepper, to taste.

5. Top the chicken with the sauce, crushed pretzels, and additional fresh herbs, if desired. Serve with the Riced Vegetable Pilaf with Sea Salt and Thyme and the Mashed Cauliflower with Butter and Sea Salt.
