I stopped at the grocery store yesterday to pick up some milk.  As usual, I wasn't able to enter the grocery store and just pick up the one thing I went in for.  I just can't do it.  Even if I try to have laser focus, I inevitably think of 5 (or 12) other things that I need once I'm there.

Or I'll see a fabulous deal that I can't pass up.  That's what happened yesterday.  As I was breezing past the fancy cheese case on my mission to get the milk, I saw one of those little sale tags on the side of the case.

It said goat cheese.

I think I gave my 2-year old whiplash because I literally stopped so fast to backtrack to make sure I read it right.  It did indeed say goat cheese.

I absolutely adore goat cheese and it's pretty rare that I see it on sale.  And this was not just a sale, it was buy one, get one free.  Naturally, I had to have it.

Once again, I had failed my mission to enter and leave the store with just what I came in for, but yay for my tummy because I bought creamy, sharp, decadent goat cheese.  I decided to eat like a queen for breakfast today and came up with this dreamy scrambled egg dish.

Eggs + goat cheese + fresh tomatoes and garlic = pure bliss.  Go on, indulge!


Goat Cheese Scrambled Eggs with Blistered Tomatoes

Serves 2-3

Ingredients
  • 1 tbsp olive oil
  • 1 pint grape tomatoes
  • 1 clove garlic, sliced
  • 6 eggs
  • 3 tbsps heavy cream
  • salt and pepper
  • 1 tbsp butter
  • 2 ounces soft goat cheese
  • fresh herbs (thyme, basil, oregano, or parsley would all be great choices)

Instructions
  1. In a heavy skillet (I used a cast iron skillet), heat the oil over high heat.  Add the tomatoes to the pan and cook for 2 minutes without stirring.  Stir them around and add the garlic to the pan.  Continue cooking for another 2 minutes, stirring often.  Remove the tomatoes and garlic from the pan and set aside. 
  2. In a medium bowl, whisk together the eggs, cream and a sprinkle of salt and pepper.  Melt the butter in medium skillet over medium heat.  Add eggs to the pan.  Use a spatula or wooden spoon to fold the eggs over themselves as they start to set. Cook until desired doneness.  Stir the goat cheese into the hot eggs.
  3. Transfer the eggs to a bowl, top with the blistered tomatoes. and garnish with fresh herbs.  Serve immediately.

Notes
  • I used oregano as my fresh herb because I have tons of it growing in my garden.  Delish!
