Sliced Apple "Donuts"

Sliced Apple "Donuts" are a fun and healthy play on yeast doughnuts, but instead of dough, they're made with sliced apples, peanut butter for frosting, and a sprinkle of chocolate jimmies.

My daughter is a Daisy Girl Scout, which totally warms my heart.   Mainly because I have so many wonderful Girl Scout memories from my childhood.  I'm so excited to be involved in helping teach her and her sister scouts all kinds of great things about friendship and character.  And I'm also excited to share yummy snacks with the little ladies in her troop!

The first snack my girl and I made to share with her troop were Homemade Chewy Granola Bars.  The girls loved them!  Super easy to make and perfect for a scout meeting.

The next time it was our turn to bring snacks, I decided it would be fun to get the girl in the troop involved in the preparation, so we made these fun apple donuts!

I sliced the apples for the girls and they got to spread on the peanut butter, which was the perfect icing for the healthy donuts.  Then, just a little sprinkle of chocolate jimmies finished them off perfectly.  The girls were asking for seconds and thirds!

Ingredients
  • apples
  • peanut butter
  • sprinkles

Instructions
  1. Thinly slice the apples and use a knife or a cookie cutter to make a hole in the center, just like a doughnut!  Blot them with a paper towel to remove the moisture.  Spread the apples with peanut butter and top with sprinkles.  Easy, healthy, and delicious!

Notes
  • These would be yummy sprinkled with all kinds of goodies like chopped nuts, dried fruit, toasted coconut, or even drizzled with honey!
