Creamy Parmesan Chicken with Baby Bellas and Garlic Roasted Green Beans

This time of year is full of the hustle and bustle of the holidays.  Last minute shopping and wrapping is on the mind as Christmas day grows near.  Sometimes while you're focusing on family, friends and festivities, the last thing you want to worry about is dinner.  Recently, I was asked to try out one of Campbell's Skillet Sauces and I'm so glad I did!  I made a super tasty meal in just over 15 minutes.  The Creamy Parmesan Skillet Sauce I chose to make for my family not only made preparing dinner a breeze, but this rich delicious meal is also totally holiday-worthy and woud make an excellent dish to serve for Christmas dinner or at your New Year's dinner party!


Creamy Parmesan Chicken with Baby Bellas and Garlic Roasted Green Beans

The package suggests serving the delicious parmesan sauce with chicken over rice or pasta.  I decided to skip the rice and pasta (although it would have been delish, I'm sure), I added some earthy mushrooms (because I'm lovin' mushrooms these days), and I paired the chicken amd mushrooms with tender crisp roasted garlic green beans.  The flavors or the parmesan, the garlic, and the mushrooms were all perfecctly harmonious.  I served the meal with flaky crescent rolls to help sop up all of the creamy parmesan goodness drizzled over the chicken.

The Creamy Parmesan Skillet Sauce used in this recipe was super yum and I'm betting the other varities are, too.  If you're looking for some fresh ideas on how to get a delicious homemade dinner on the table in right around 15 minutes, I recommend giving one of Campbell's Dinner Skillet Sauces a go this holiday season!  They get two thumbs up from me!


Ingredients

Parmesan Chicken and Mushrooms
  • 1 (9 ounce) pouch Campbell's Creamy Parmesan Chicken Skillet Sauce
  • 3 tbsps olive oil, split
  • 1 lb skinless, boneless chicken breast, cut into 1 1/2 inch pieces
  • 8 ounces baby bella mushrooms, sliced
  • kosher salt and fresh ground black pepper
Green Beans
  • 1 lb fresh green beans, trimmed
  • 3 tbsp olive oil
  • 4 cloves garlic, cut into thick slices
  • kosher salt and fresh ground black pepper

Instructions
  1. Preheat your oven to 425°.  
  2. Prepare the green beans first.  In a large bowl, combine the green beans, 2 tbsp olive oil, and garlic and toss to evenly coat the green beans with the oil.  Spread the green beans onto a foil-lined baking sheet in a single layer.  Season with salt and pepper.
  3. Roast green beans for 10 minutes, remove from the oven and stir, then return to the oven for an additional 3-5 minutes.  (If the garlic starts to burn, they're past done!  Keep an eye on them!)
  4. Once the green beans are in the oven, heat 2 tbsp of olive oil in a skillet over medium-high heat.  Add the mushrooms to the pan and season with salt and pepper.  Cook for 5 minutes, stirring once.  Once the mushrooms are browned, remove them from the skillet and set aside.  Add another tablespooon of oil to the skillet.  Add the chicken and cook until browned.
  5. Stir in the sauce, return the mushrooms to the skillet, and heat to a boil.  Reduce heat to low.  Cover and cook for 5 minutes or until the chicken is cooked through.
  6. Serve the parmesan chicken and mushrooms alongside the garlic roasted green beans.

Notes
  • Baby bellas are also known as baby portabellas or cremini mushrooms.  You can substitute any kind of mushrooms you have on hand.
  • If you are hosting dinner for a larger party, this recipe can easily be doubled to serve 8 people.  Use two baking sheets for the green beans and an extra large skillet for the parmesan chicken and mushrooms.  The parmesan chicken and mushrooms would also be excellent served over rice or pasta!
