Is any party ever complete without baked brie being served? I think not. Baked brie is a simple, elegant, irresistible appetizer that should be on every party menu if you ask me.

There are quite a few variations of this classic app, and you really can't go wrong with any of them! For holiday dinners, you can wrap a wheel of brie in puff pastry before baking it. Brie is also amazing served with different fruit preserves and nut combinations.

This recipe for brie, however, is for the folks that prefer savory brie recipes over sweet. Topped with fresh garlic and fresh herbs, this savory baked brie is decadent, melty, cheesy deliciousness that is baked to dippable perfection.

Be warned, though, this brie is for garlic lovers only.  The top of the brie is basically blanketed with garlic before you bake it, so there's no escaping the garlic goodness.  If garlic is your jam, well, you have found the perfect easy appetizer for you.

How to Make Baked Brie With Garlic and Herbs

Making garlic baked brie couldn't be easier!  Simply score the top of the brie, place brie in an oven safe dish, top with toppings of your choice, and bake for 15-20 minutes.  See below for detailed recipe instructions.

Should I Cut Off the Rind When I Bake Brie?

You absolutely do not have to cut off the rind before you bake brie.  The white rind the coats the outside of the brie is 100% edible and actually quite delicious!  Scoring the top of the brie helps the rind to be easily scooped up with the melty inner cheese after it is baked.

Why Does My Brie Smell Like Ammonia?

Brie is a type of cheese that has what is referred to as a bloomy rind.  The outside rind is actually a layer of soft white mold that is completely edible.  Ammonia is a natural by-product of the cheese aging and ripening process.  When the cheese is wrapped to be sold in the supermarket, the ammonia smell gets trapped by the plastic wrapper.  To lessen the ammonia smell, let your brie air out at room temperature for half an hour or so before using it.  Brie is mean to be eaten at room temperature or warmer, so you would want to do this whether there is an ammonia smell or not.

What Are Good Baked Brie Dip Toppings?

This baked brie recipe is topped with fresh minced garlic, fresh thyme, olive oil, salt, and pepper.  Other delicious toppings that are perfect for brie include fruit (fresh, jams, or spreads), honey, chopped nuts, caramelized onions, other fresh herbs, and pretty much any other topping you would enjoy.  From sweet to savory to spicy, the flavor of brie goes with just about everything!

What Should I Serve With Baked Brie?

Melted baked garlic brie is creamy, thick, rich, and needs a hearty dipper.  Try dipping crackers, hunks of bread, or even fresh vegetables in your baked brie.

Can Brie Be Reheated?

Yes, baked brie can be reheated.  I reheat brie in my oven set to 350 degrees F for about 10 minutes or until the cheese is softened again.

How to Store Leftover Baked Brie

Store leftover brie tightly covered with plastic wrap in the refrigerator for up to two days.

INGREDIENTS

1 (1.1 lb) wheel brie cheese
3 cloves garlic, minced
1 teaspoon fresh thyme, minced
1/8 teaspoon salt
1 tablespoon olive oil
fresh cracked black pepper
crackers or bread for dipping


INSTRUCTIONS
  1. Preheat your oven to 375 degrees F.
  2. Score the top of the brie in a crisscross pattern. Place the brie into an oven-safe baking dish
  3. In a small bowl, combine the minced garlic, thyme, salt, and olive oil. Spoon the garlic mixture over the top of the brie. Top with freshly cracked black pepper.
  4. Bake in the preheated oven for 20 minutes or until the cheese is completely melted. Serve with crackers or bread for dipping.


NOTES

Make sure to bake the brie in an oven-safe dish that has sides just in case some of it oozes out of the rind while baking. The dish should be close to the same size as the brie, if possible. If not, watch it carefully and remove it from the oven if it starts oozing! This is the vintage corningware I like to use.

    1. The pan she used looks like one that I have. It’s an old Corning Ware, they came in a set, all with handles. Hope that helps

  5. I made this for Thanksgiving at my in-laws house. No one liked this including myself! I could tell it was due to the garlic. I remade this and cooked 6 cloves of garlic (chopped very small)in the oil on the stovetop until the garlic was browned. I then added 1/8 tsp dried thyme and 1 T. Olive oil plus the other spices and poured over the Brie. After baking it and making it this way it was delicious and my husband and I ate the entire thing between the two of us.
