One of my favorite things about a holiday dinner, specifically Thanksgiving dinner, is all of the yummy casseroles.  I am a casserole-loving girl through and through!

Sweet potato casserole, green bean casserole, and corn casserole are some of my faves, but an often overlooked Thanksgiving casserole that should be on everyone's menu is broccoli.

Yes indeed, broccoli casserole is the perfect side dish to add to your Thanksgiving menu.  It's creamy, cheesy, and topped with golden french fried onions.  What's not to love?!

While I myself love green beans, I know that not everyone does.  If you are anti-green bean, but still want that creamy veggie casserole on your plate, this broccoli casserole is for you!

It is just like the green bean casserole that you know and love, but I add a little bit of cream cheese (for that luscious factor) and oodles of sharp cheddar cheese (because everything is better with cheese).

CAN I USE FROZEN BROCCOLI TO MAKE BROCCOLI CASSEROLE?

Yes!  You can use frozen broccoli to make broccoli casserole.  Thaw the frozen broccoli first and use it in place of the fresh broccoli.

DO I HAVE TO BOIL THE BROCCOLI FIRST FOR BROCCOLI CASSEROLE?

It is your choice whether you boil the fresh broccoli before using it in this recipe.  If you do not boil the broccoli, it will be slightly less cooked than if you boil it first.  If you boil the broccoli first, you will end up with a very soft broccoli casserole. Alternately, if you want to steam the broccoli, use this tutorial for how to steam broccoli.

CAN I MAKE BROCCOLI CHEDDAR CASSEROLE IN ADVANCE?

Yes, you can make broccoli casserole in advance.  Prepare the recipe until just before baking.  Cover and refrigerate until ready to bake.

Broccoli Cheddar Casserole


This Broccoli Cheddar Casserole is made with a creamy cheddar cheese sauce and is topped with french fried onions.

INGREDIENTS


2 bunches broccoli
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk
4 ounces cream cheese, softened
1/2 teaspoon fresh ground black pepper
2 cups sharp cheddar cheese, shredded
1 cup french fried onions


INSTRUCTIONS


1. Preheat your oven to 375 degrees F.

2. Cut the broccoli into florets. Bring a large pot of water to a boil. Boil the broccoli for 4 minutes, then drain well*.

3. In a medium saucepan over medium-high heat, combine the mushroom soup, milk, cream cheese, and pepper until well combined. Mix in 1 cup of the cheddar cheese. Stir until the cheese has melted.

4. Transfer the broccoli to a medium-sized greased baking dish. Spoon the cheese sauce over the top of the broccoli and stir to coat. Bake in the preheated oven for 30 minutes.

6. Remove the casserole from the oven and top with the remaining cheddar cheese and french fried onions. Bake for an additional 10 minutes. Let sit for 5-10 minutes before serving.


NOTES


*It is important to thoroughly drain the broccoli before adding it to the casserole dish. If you don't drain the broccoli well, the casserole could come out watery.
