Quick and Easy Chicken Noodle Soup with fresh carrots, celery and onions

This is my go-to recipe when someone in my family is feeling under the weather.  Unfortunately, my hubby's got a nasty bug.  It just breaks my heart to see someone I love sick.  I just want to do something to make them feel better, so I usually head to the kitchen to make this soup.  It takes no time to throw together and is way better than the stuff in the can.

This soup is full of all kinds of yummy goodness with fresh celery, carrots and onions simmered in a steamy flavorful broth.  I usually have some leftover chicken of some kind in the fridge, but if not I'll cube a chicken breast and quickly saute it in a pan to throw together this soul warming soup.

I've yet to prove it, but I think this Chicken Noodle Soup is magic.  There's just something about it that makes you feel better.  I don't know...maybe it's all that love I put into it.  I wouldn't wish a cold on anyone, but if you find you've come down with one, give this soup a shot and see if it works for you.  I hope it does!


Ingredients
  • 3 tbsp butter
  • ½ onion, diced
  • 1 large carrot, thinly sliced
  • 1 celery stalk, thinly sliced
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp ground marjoram
  • salt and pepper to taste
  • 2 cups chicken, cooked and chopped (I used a combination of white and dark meat that I picked off of the chicken carcass from last night's roasted chicken)
  • 6 cups chicken broth
  • 1½ cups uncooked egg noodles
  • 1 bay leaf


Quick and Easy Homemade Chicken Noodle Soup


Instructions
  1. In a large soup pot, melt butter over medium heat.  Add the onions, celery, carrots, basil, oregano, marjoram, salt and pepper and saute for 5 minutes.
  2. Add the chicken, chicken broth, egg noodles and bay leaf.  Raise heat to high and bring to a boil. 
  3. Reduce heat and simmer uncovered for 20 minutes.  Season with salt and pepper to taste.
