Banana French Toast

If I asked everyone I know, "Do you know how to make french toast?" I'm pretty sure every single person would say they do. It's a basic recipe that mom made for us and her mom made for her. You simply dip some bread in whisked egg and throw it in a pan.

This recipe, however, trumps any french toast I've ever tasted. I don't know if it's the subtle sweetness from the honey or the richness of the cream, but something about the combination of ingredients brings this classic recipe to a whole new level of yumminess. I chose to use whole wheat bread in the dish pictured, but I've been known to substitute white bread, raisin bread, egg bread...pretty much any bread would work.

How To Make Banana French Toast

This is a super simple french toast recipe. You basically make your egg batter, dip your bread, and then cook it in a hot frying pan! Then, for the banana topping, sliced bananas are combined with butter and brown sugar and cooked until they are golden and caramelized. The bananas are served over the french toast. It’s that easy! What Kind of Bread Should I Use?

One thing I love about french toast is that it is fairly versatile. We commonly have regular sliced sandwich bread in the fridge that we use for this french toast recipe, but it is equally delicious with thicker sliced sourdough, egg bread, or french bread.

Variations

I personally could eat french toast just like this every day, but sometimes it's fun to mix things up a little!
  • Top your french toast with powdered sugar.
  • Add orange zest to your batter.
  • Try using a sweet bread like cinnamon raisin bread or banana bread for your french toast.
  • top the bananas with chopped nuts for a crunchy texture.
  • Top off your french toast with a dollop of whipped cream.


How To Keep French Toast From Burning

This French Toast recipe used honey as a natural sweetener, and when heated at too high of a temperature, honey can burn. But, if you keep your pan away from high heat, you should have no problem with burning! Here are my tips for making the best golden brown french toast.
  • Keep your burner set to medium heat.
  • Only flip the french toast once. After putting your bread into the pan and letting it cook for a bit, gently lift one corner to see if it has browned. When golden, flip to the other side to finish cooking.
  • Don't walk away from your french toast while it's cooking! You can go from golden to burnt in the blink of an eye!


What To Do With Leftover Caramelized Banana Topping

If you have leftover banana topping, there’s plenty you can do with it. Here are some of my favorites ways to use extra caramelized bananas:
  • Spoon it over homemade ice cream
  • Top your morning oatmeal with it
  • Mix into cottage cheese or yogurt
  • Add them to PB&J for a 'nana twist
  • Serve leftovers over pancakes or waffles
  • And so much more!

How To Store Leftover French Toast

Store this french toast in the fridge for up to five days. If possible, store the banana topping and french toast separately. Reheat in the microwave in short 15-second increments until heated through.

INGREDIENTS

8 slices of bread
2 eggs
1/4 cup heavy whipping cream
2 tablespoons honey
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 tablespoons butter
FOR THE BANANAS

2 bananas, sliced
1 tablespoon butter
1 tablespoon brown sugar
a pinch of salt

INSTRUCTIONS

  1. Whisk together eggs, whipping cream, honey, salt, cinnamon, and vanilla.
  2. Melt 1 tbsp of butter in a large frying pan on medium heat.
  3. Dip both sides of bread in the egg mixture and place in the frying pan. Cook until golden brown, adding the second tablespoon of butter to the pan when you flip the pieces of french toast.
  4. While the french toast is cooking melt the butter for the bananas in a separate pan over medium heat. Add the bananas and salt and cook until the bananas are hot and begin to soften. Top with the bananas.


NOTES

If you are using thick-sliced bread, soak the bread in the egg mixture for at least 30 seconds per side.
